Position Summary:
A Sous Chef in a Critical Access Hospital (CAH) in Washington State is responsible for providing nutritious, appealing, and safe meals to patients, staff, and visitors while adhering to strict dietary guidelines and food safety regulations. The position will operate as the interim Executive Chef in their absence and be responsible for assisting in establishing and running a retail café focused on healthy meals.
ESSENTIAL FUNCTIONS/MAJOR RESPONSIBILITIES:
- Menu planning, recipe development and execution: Assist in developing and implementing regular and modified menus tailored to diverse dietary needs, including therapeutic, restrictive, and cultural preferences, in consultation with the Executive Chef and/or Dietitian.
- Food preparation and presentation: Prepare and cook a variety of meals and beverages according to established recipes, ensuring proper portioning, attractive presentation, and timely service for breakfast, lunch, and dinner while following established dietary orders.
- Food safety and sanitation: Maintain a clean and sanitary kitchen environment, adhere to Washington State Retail Food Code regulations (WAC 246-215), and implement safe food handling, storage, and preparation practices to prevent foodborne illness, according to the Washington State Department of Health.
- Dietary compliance: Consult with the Dietitian to accurately prepare modified diets and ensure meals meet any special dietary or nutritional needs.
- Inventory management and cost control: Monitor and control inventory of food and non-food supplies, adhering to budget guidelines, and making decisions regarding the appropriate utilization of leftover food products.
- Staff supervision and training (if applicable): Supervise and train kitchen staff in food preparation, equipment operation, food safety, and sanitation according to regulations and established company/hospital standards.
EDUCATION AND/OR EXPERIENCE:
- Washington State Food Worker Card: Required within 30 days of hire.
- High School Diploma or Equivalent: A basic educational foundation is typically required.
- Culinary Training (Optional, but advantageous): While not always strictly mandated, completing a culinary degree or vocational program can provide a strong foundation in cooking techniques and food safety, enhancing career opportunities
- Certified Food Protection Manager (CFPM) Certification: Many food establishments, including CAHs, are required to have at least one CFPM on staff. This certification, accredited by organizations like the American National Standards Institute (ANSI), demonstrates a higher level of expertise in food safety management and is often a state requirement.
- Dietary Manager Certification (CDM/CFPP): This certification demonstrates knowledge in nutrition and foodservice management, making it highly relevant for a CAH chef.
- Experience: Previous experience in healthcare or a similar institutional setting is often preferred. Experience in establishing/start up a café focused on nutritional meals. Restaurant experience preferred.
